Ingredients:
1 tbsp olive oil – 🫒 Healthy fats, supports heart + hormone balance
1 cup chopped onion – 🧅 Anti-inflammatory, immune-boosting sulfur compounds
3 cups chopped carrots – 🥕 Rich in beta-carotene for skin, vision, and immune health
2 tbsp fresh ginger (or 1 tsp ground) – 🌱 Aids digestion, reduces inflammation
3 garlic cloves, chopped – 🧄 Antibacterial + supports immune system
4 cups vegetable broth – 💧 Mineral-rich base, adds electrolytes
1 tbsp apple cider vinegar – 🍎 Balances pH, supports gut health
Optional Toppings:

Instructions:
In a large pot, heat olive oil over medium.
Add onions and sauté for 5 minutes.
Stir in carrots and cook for another 5–7 minutes, until softened.
Add garlic and cook for 1 more minute.
Pour in broth. Bring to a boil, then reduce to a simmer for 30 minutes.
Remove from heat. Stir in apple cider vinegar.
Let cool slightly, then blend until smooth.
Serve warm with desired toppings.
