Quick, colorful, and bursting with flavor, this Low-Carb Chicken & Veggie Stir-Fry is one of my favorite go-to meals when I want something healthy, protein-packed, and satisfying, without the heaviness or carb crash. Served over fluffy cauliflower rice, this easy dinner is ready in just 25 minutes and makes a perfect weeknight meal, post-workout refuel, or meal prep staple.

Ingredients:
2 chicken breasts, sliced thin
1 bell pepper, sliced
1 cup broccoli florets
½ onion, sliced
2 cloves garlic, minced
1 tbsp olive oil
2 tbsp soy sauce or coconut aminos
2 cups cauliflower rice
Salt and pepper, to taste

Instructions:
Heat olive oil in a large skillet or wok over medium-high heat.
Add sliced chicken and sauté for 5–6 minutes, until browned and cooked through.
Add garlic, onions, broccoli, and bell pepper. Stir-fry for 4–5 minutes until veggies are tender-crisp.
Pour in soy sauce or coconut aminos and toss everything to coat. Cook 2 more minutes.
Warm the cauliflower rice in a separate pan or microwave until hot.
Serve stir-fry over cauliflower rice. Optional: Top with sesame seeds, green onions, or a squeeze of lime.
